I love this recipe from Moosewood's Low-Fat Favorites. It's great as a dip for tortilla chips or even as a sandwich filler. Very addicting...
One-Step Bean Guacamole
1 avocado, preferably Hass
1 and 1/2 cups cooked kidney beans (15 oz. can, drained)
1/2 cup prepared Mexican-style red salsa
1 to 2 Tbs. chopped fresh cilantro
salt and gr. black pepper to taste
(Makes 2 cups)
Halve the avocado lengthwise and gently twist the halves to seperate from the pit. Make lengthwise and crosswise cuts about 1/2 inch apart in the flesh of each half. Scoop the avocado cubes out of the skins and into serving bowl. Stir in the kidney beans, salsa, and cilantro. Add salt and pepper, if desired, and serve. Hide from your husband.

Woohoo! Just had it for lunch...and yes...not sure if C. would like it, but I think he would if I mashed it up good...actually he prob would..just not in a sandwich.
I'm making this again for dinner tonight...Brad and I are both big fans of this now...We had it in wraps with a couple other vegtbls and it was great!
